Ingredients
1 1/2 cups almond flour
1/2 cup plain Greek yogurt (I use whole milk yogurt)
2 large eggs
1/3 cup honey
Zest of 1 lemon
Juice of 1 lemon
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
Preparation
Equipment Needed:
Two bowls; loaf or cake pan
Step 1
Preheat oven to 350F. Grease loaf or cake pan.
Step 2
Whisk wet ingredients until smooth: yogurt, eggs, honey, lemon zest, lemon juice, and vanilla.
Step 3
Combine dry ingredients in different bowel: almond flour, baking powder, and salt.
Step 4
Slowly fold dry mixture into wet mixture until just combined. It should be a light batter.
Step 5
Pour into loaf or cake pan and bake for 35-40 minutes.
Step 6
Let cool before slicing. Consider a dusting of powdered sugar on the top, along with a serving of berries.
